Racked the Rose into a five gallon bottle. Added 1/4 tsp of metabisulfite.

Cabernet Franc 45 kilos, Merlot 5 kilos, and Cabernet Sauvignon 85 kilos were mixed. About seventeen gallons of grapes.
The Syrah was set to ferment by itself in a small container. 41 kilos. About eight gallons of grapes.

Some of these grapes were mixed with the Hecho a Mano blend. Some were mixed with the Jardin Botanico Cabernet Sauvignon, and most were added to Ernesto's blend of Cab Franc and Cab Sauv.

The Cabernet Sauvignon/Cab Franc blend had fermented to 1 Brix. Stanley started a malo- lactic fermentation and we pressed the grapes. Yield: Just less than 33 gallons. It is in a 30 gallon barrel and a 3 gallon glass carboy.
August 15, 2013
Ernesto returned the carboy of Rose. It has been in the refrigerator since pressing. Warmed up, it has started to ferment again.
