Adjustment:  Added 40 grams of Tartaric Acid
Yeast:  Red Star Cote des Blancs

Juice is chilling in two five gallon carboys.

Alejandro and Andres, Nacho's nephews from Mexicali were here visiting Perote.  They were a big help today.

Stanley checked the wine.  It's delicious!  No sugar, but very fruity.
