We added 1/4 tsp metabisulphite and about 1 3/4 cups bentonite slurry to the 6 1/2 gallon container.

We racked the Sangiovese from a 6 1/2 gallon container into a 5 gallon container.

We bottled the Sangiovese with 12ppm SO2. I rinsed those bottles for the library with metabisulphite.
