August 5, 2010

Stanley has been watching the Sauvignon Blanc grapes like a hawk since we harvested on Monday. Yesterday afternoon he saw a few bunches with ripe-rot so first thing this morning he was in the vineyard with his clippers.

Today's harvest was approximately 150 pounds. Chemical analysis

Ph 3.3

Acid .95 Uh oh! Way high!

Brix 23

We have combined the two harvests. The cooler was turned off last night so the new grapes would begin fermenting immediately. We have a combined total of about 21 gallons - enough to fill over 100 bottles. Can't wait to see how it will turn out.
