August 4 and 5
We picked up the Flextanks and the new crusher stemmer and brought them to Perote on 8/3. The new machine makes the whole job a lot easier.
Cabernet Sauvignon 159.8 pounds Brix 27 Acid .525 Ph 3.6
Sangiovese 258.0 pounds Brix 26 Acid .475 Ph 3/6
