July 20, 2012  We pressed the wine and put it in the new 100 liter barrel.  There was almost enough to fill it.  Often when wine is first pressed, fermentation starts up again briefly.  When Stanley is satisfied that the wine is completely still, he will fill the barrel completely to avoid oxidation.  

July 23, 2012
Stanley added about 1 gallon of the wine we had prepared for this year's vendimia.  The malolactic fermentation was started.
